It wouldn't be too hard to catalog Web 2.0 as nothing but a train of copy cats and in fact, you would be pretty accurate. But like the free market, the cream of the crop will rise to the top. Sure, there a hundreds of Twitter clones, but Twitter still maintains the majority of users for it's niche because its the best and it has the mass following. I agree with your initial line of thought. More innovation would sure be refreshing.
